Persimmon Harvest

The persimmon harvest is a moment when autumn reveals its gentle beauty in full. Golden fruits, filled with sunlight, are carefully picked from the branches, filling the air with a sweet aroma of warmth and comfort. It is not just a process, but a quiet enjoyment of nature, where each fruit holds a piece of sunny days and the calm of an autumn garden.

Step 1

Persimmon harvesting is a careful, step-by-step process that directly affects the quality of the fruit:Persimmons are picked by hand at full maturity, usually in autumn. The fruits are cut together with the stem to prevent damage and extend shelf life. It is important to avoid dropping the fruit, as it bruises easily.

Step 2

Persimmon sorting is an important step that helps separate high-quality fruits from damaged ones and prepare them for drying. After harvesting, the fruits are inspected either manually or on a sorting line. First, damaged, overripe, or underripe fruits are removed. Then the persimmons are sorted by size, color, and level of ripeness.

Step 3

Drying persimmons in drying chambers is a controlled process that ensures consistent product quality. The fruits are washed, optionally peeled, and placed on trays. Drying takes place at a temperature of 50–70 °C with constant air circulation. Depending on the size of the fruits, the process takes 12–48 hours. After that, the persimmons are cooled and packaged.
